The Rear Quarter comes from the hind leg and is where classic ham cuts originate. With its dense muscle structure and rich fat coverage, Mangalitsa ham is prized for both fresh roasts and cured preparations.
This quarter is sold whole, giving you the option to roast, cure, grind, or have it custom processed by a butcher.
This quarter may yield:
• Bone-in uncured ham
• Ham steaks (if cured and sliced)
• Ground pork
• Soup bones or trim
Mangalitsa ham is exceptionally flavorful and well-suited for slow roasting, smoking, or dry curing due to its fat content and texture.
Note: This quarter is not cut or portioned prior to pickup. Yield and final cuts depend on how you choose to process it.
